Every fruit is tightly selected since the hotel wants the best quality for each fruit. 1. Avocado This fruit is sometimes called an avocado pear or alligator pear, due to its shape and rough green skin. A ripe avocado will yield to a gentle pressure when held in the hand and squeezed. The fruits are allowed to ripen off the tree but they cannot be picked too early or the fruit will shrivel and fail to ripen. 2. Honeydew Honeydew has a round to slightly oval shape, typically 15-22 cm long. It generally ranges in weight 1.8 to 3.6 kg. The flesh of honeydew is pale green in color. This fruit is harvested based on maturity, not size. Maturity can be hard to judge, but is based upon ground color ranging from greenish white (immature) to creamy yellow (mature). Quality is also determined by the honeydew having a nearly spherical shape with a surface free of scars or defects. Also, honeydew should feel heavy for its size and have a waxy surface. 25
